2 lbs. red snapper
2 tbl. Key Lime juice
1 tbl. melted butter
1 1/2 tsp. Zest (grated lime peel)
Sea Salt and black pepper
Pinch of nutmeg
Preheat oven to 350 F. Cut snapper fillets into 6 serving-size pieces.Combine the Key Lime juice, butter, Key Lime peel, salt, black pepper and nutmeg. Mix thoroughly, then spoon over fish to cover completely. Bake uncovered, basting with pan juices until the fish flakes easily, about 15 minutes or less for very thin fillets. Garnish fish with fresh parsley sprigs and lime wedges.
