Cuban Key Lime Chicken

5 lbs. skinless chicken pieces

5 - 6 cloves crushed garlic

1 tsp. ground cumin

1 sliced lemon, no seeds

1/4 cup Key Lime juice

1/4 cup Florida orange juice

1 cup thinly sliced onions

1/4 cup extra virgin olive oil

1- 3-oz. Jar pimiento pieces

Salt & ground black pepper

Mix together garlic, cumin, lemon slices and juices. Pour over chicken Add onions and marinate, refrigerated, for about 3 hours. Saute' marinated chicken in oil until golden. Add pimiento, salt and pepper. Cook over medium heat for about 5 minutes Simmer for another 25-30 minutes.

Serves: 6-8
