Chef Kevin's Deep Dish Key Lime

4 eggs, slightly beaten

4 egg yolks

1 1/4 cups sugar

1/2 cup Key Lime Juice

1/2 cup plus 1 tbl. Sweet softened butter

 

Combine 4 slightly beaten eggs, yolks, sugar and key lime juice and vigorously whisk in a bowl over a double boiler. Cook, stirring until thick. Remove from heat. Whisk in the butter. Pour into a pre-baked tart or shell and chill 2-3 hours. Serve with papaya, mango, or a tropical fruit sauce. Makes: 1 8-inch round deep tart
