Aunt Betty's Key Lime Cake

1 pkg. Duncan Hines lemon   Supreme Cake Mix

1/2 cup water

1/2 cup Key Lime juice

Zest (grated peel) of 2 limes

1 3-oz. pkg. lime Jell-O

2 tbl. Milk

1/2 cup vegetable oil

4 eggs, slightly beaten

1/4 lb. butter, softened

1 8-oz. pkg. cream cheese                      

1 tsp. vanilla extract

1 lb. confectioners' sugar


Blend ingredients together with the zest of 1 lime, 'til well combined, about 3 min. with an electric mixer. Pour into a greased 9" x 13" x 2" baking pan; bake for 45 minutes To prepare the frosting, combine butter, cream cheese, vanilla, confectioners' sugar and milk. Blend until smooth and creamy. Add milk to reach the desired consistency. Spread over cake. Grate the remaining lime peel over frosting.

Makes: 1 Tropical Cake
